Kluyveromyces lactis is a yeast very commonly used in the cheese industry. It is important for maturation as well as flavour development and can also be found in fermented dairy drinks like kefir. K.lactis is considered a safe yeast for food production and no currently there are no links between this yeast and any human disease.
